When my friend Kemetic Yogi lived in Atlanta, he owned a space called the Healing Earth Temple. He grew and shared amazing vegetables from his garden with me - He grew foods like sweet basil, purple basil, long beans, tomatoes and so much more. Some of these foods inspired this dish. This recipe, Pesto Quinoa Pasta Primavera with Lemon Essential Oil, was updated a bit. Here is a lovely pasta salad that I created which incorporates some of these veggies along with lemon essential oil. Lemon essential oil adds a brightness to the pesto and the overall dish. This pasta primavera is simple to make. You can make it for lunch, dinner or even make it to bring to a small gathering. This is one of my little offering to you this week. Pesto Quinoa Pasta Primavera with Lemon and Black Pepper Essential Oils
A year ago around this time, I was in Tallahassee, Florida doing the cooking show, Stirrin' It Up with Chef Beee at a wonderful restaurant called, Nefertari's with a brother by the name of Baba Kamau. We made Nigerian Peanut Stew together and it was just incredible. He said that sometimes they call it African Peanut Stew. I like that name, so I decided
to go with it. As you may know, I will be heading to Ghana, West Africa this upcoming week and wanted to share this recipe as I begin to prepare for the trip. This recipe, African Peanut Stew, was updated a bit to include an essential oil. I add a few drops of Ginger Essential Oil to this one pot dish and it really makes the dish taste even more amazing.
